Choosing The Right Vegetables

Vegetables: Carrots, squash, sweet potatoes, basil, onions, and tomatoes are all excellent candidates for roasting vegetables in the oven. When you roast vegetables in the oven, make sure that you keep the bottom part of the vegetables darker so that they retain more of the color and flavor of the spices you use in cooking. Depending on your taste preferences, you may choose to roast a few vegetables at a time or leave the entire pot of roasted vegetables uncovered in the back of the oven for an hour or so, until they are fully done. You can decide when they’re done based on whether they have darkened.

Zucchini and Browned squash: These two vegetables are relatively simple to cook and should do well in any oven. Simply add them to your baking sheet, bake for about fifteen minutes, then turn them over and brown them in your oven for another five to ten minutes. Both of these vegetables brown easily and can be served cold. If you prefer, you can mash them instead of puree them when you’re ready to serve them. Try adding some carrot juice or white wine to the mashed squash for a sweeter dish.

However, you’ll need to read up on roasting tomato and pepper plants before attempting to do so yourself.  Keep in mind that tomatoes have to be finely chopped in order to avoid burning. Meanwhile, you can mash the pepper to get rid of excess seeds and then add them to the tomatoes. Cook together for about an hour, until the tomatoes are soft and you can easily move them from the heat.
